It's short but check out the Randy Thomas cookout video at Redskins.com. You'll see Santana and Marcus and Randy of course with several others. Looks like Randy knows his way around the kitchen and working a grill.

I thought it was John Hall, didn't really look like Archuletta but I could be wrong.

Randy looked like he was getting some serious cooking on there!! And back off my man's grill! Like someone said he just probably has it all nice and broken in. :D Plus, you have to give him props for not having a gas grill. He was gettin' done just fine apparently... I mean Marcus Washington was talking with his mouth FULL. That is a good sign for any cook.

Lets do it up! We can have Rich do something, your amazing steak, anything made by the lovely Keisha, and I am rethinking my ribs... A lot of people pre-boil ribs then grill them which to me is blasphemy b/c you're losing a lot of good flavor out into the boiling water. But the more I thought about it, it would be a good step for tailgating b/c the ribs could cook for a little while but wouldn't need hours on hours. So I decided to come up with two more "rib rules" when pre-boiling:

1) Do not use water. Almost any liquid would be better b/c water doesn't bring any flavor to the party (Alton Brown phrase). Personally, I am thinking of trying a couple different beers along with a host of other flavors mixed in. But I'm thinking it really shouldn't be water.

2) Once the ribs have a chance to preboil, keep the liquid and reduce it down to make a mop or sauce. That way, you aren't losing all that tasty rib flavor that went into the liquid during the preboil.

Thoughts??

Smoak..I'm "queing" tommorrow. I know I'll give randy a run. I have a recipe that us unmatched....and unbelievable!!! can't share it though...tommorrow, I'll be doing my fathers day "QUE" just me and my two son's...chilling out together.....

First, we're gonna get up early and go to the track and work out. Then we'll come to the house and get the coals ready abround 9:00 and handle business and fill our bellies wityh lots of calaries....LOL...kinda defeats the purpose huh...LOL

Thoughts??I've heard of folks steaming the ribs instead of boiling them. They steam them with beer and vinegar. I hear it tenderizes the ribs as well.

Hmmm.... Steam. Now that is an interesting option. You can still use flavorful liquids without the "blah" effect that I feel you get with pre-boiling. Great idea and I'll had to do a "Pepsi Challenge" during one game next year.

Consider yourself on the team... Actually, I wonder if any of the other Redskins can cook? We certainly know they can eat.

Now what good is it to take a great recipe to the grave with you. In my mind, I think the only way to fight the fast-food and processed-food craves in the US are to show people that good food is not reserved for only occasionally dining out. I at least hope you are passing this knowledge to your sons b/c we wouldn't want them turning to McDonalds for three meals a day once they are out on their own. :D

It sounds like a blast and enjoy it my friend!!! We should catch up and do some tailgating... The preseason games are on Friday I believe. Just a thought.

Not to highjack the thread, but do you make your own sauce? And what wine do you use?

Its weird, I went almost my whole life not really eat and never cooking ribs to having a borderline addiction.

That's impressive that John Hall has enough respect to be allowed to hang with the players. A normal kicker wouldn't have been allowed to walk through the door unless it was to clean Randy's pool.

I thought that as well, but I also remembered that Hall and Randy Thomas have played together for a long time. I'm thinking they have to be coming up on 10 years soon so I'd imagine they are good friends. Just a guess though b/c I don't know either personally.

Now if Frost was in there!!!?? :D

Hey remember "McDowells'" instead of McDonalds? That was a laugh! and when the family got up from McDowell's couch and left all that "Glow" from their hair on it.

That's called seasoning and in my experience is what makes the food taste so good.....it's just better not to look at the cooking surface sometimes! :D

exactly my thoughts, like i said above it looks well seasoned. i also like he how he didnt cover his grill racks with foil like some people. its ok to scrape old chunks of food of the racks, but to make the inside of the grill nice and shiny again is almost a sin

I would only boil my ribs if they were frozen. I don't like boiling anything, because it does rob the meat of all it's flavors. But if you have to, then you might as well boil them in some special mix! Slow cooking is definitely the way to go. Speaking of ribs, I just made some banging ribs yesterday. Trying out a new secret sauce that I came up with.

I am going to take a day on my vacation (next week) and cook a rack each using my traditional dry method, a pre-boil (see my earlier post), and a pre-steam.

boiling tends to take the juices out of things like ribs and chickens and dries them out. its best to get a good initial seal on the outside of the meat to lock in the juices and flavors as much as possible then slow cook them from there

I agree and that is why I was ALWAYS against boiling. I wouldn't cook anything if it meant a pre-boil (just try a different approach or recipe). However, pre-boiling in very flavorful liquids and using the liquid to make a mop or sauce might work. I'm skeptical, but I'll give it a whirl....

I wish the Redskins would host a cookout with the players! It would be fun to see RT in action. :D

i remember seeing randy thomas at some bbq place i think on the news last year and dude ate like 5 or 8 pounds of just meat. i forget how much exactly. but it was a lot and it some challenge so everyone with him could eat for free or something. they had a time limit to do it tho and i think he just missed it. RT is a guy i could almost never imagine seeing in some drivethru or ordering a pizza.

My brother is a chef and he has told me that the reason most meats are boiled is too liquify the fat and force it out of the meat, especially meats that are destined for a grill. The less fat in the meat, the less flare ups from an open flame and therefore, less charring of the meat.

Example? Bratwurst.

Hey Smoak!

Thought I'd weigh in on this one since I'm cooking ribs tomorrow.

I've tried pre-boiling and don't really like it. The meat seems bland. I might not have done it right but what I do now works great.

I brine my ribs overnight, then dry them off, apply a rub and cook 'em low and slow. I mop the ribs with BBQ sauce about an hour before I take 'em off the grill, then add more sauce right before I pull 'em off and wrap the ribs up in foil an let them stand for about 15 minutes.

Here's the brine recipe:

1 rack of ribs
6 cups apple cider
1 cup, apple cider vinegar
1 tbsp. black peppercorns
1 tsp. ancho chille powder
2 bay leaves
2 tbsp. salt
4 tbsp. Szeged Steak Rub (or Montreal Steak Seasoning but Szeged is better)

If you do brine your ribs, make sure to use plastic or glass, the brine with metal will mess with the taste.

For the sauce I use Stubbs but I add ancho chille powder, red pepper, and a little Knob Creek bourbon.
