So, during my weekly visit to the Dutch Market last week, they had prime rib roast on sale, so I bought I bone. It was about 3 pounds and I cooked it tonight. I made a house rub including garlic powder, pepper, onion powder, lawrys and Tony's meat seasoner.
I rubbed it down with butter first after I left it sit to reach room temp. I then laid down some fresh minced garlic (I love garlic). I then topped it off with the house seasoning.
Put it in the oven at 450 for 15 minutes and then lowered it to 325 for about an hour. Man, this thing is so tender and the right amount of pink inside too. YUMMMMMMM

As well as the little horseradish on the side, which is a nice addition, I like the pan juices, strained and somewhat skimmed, in a small cup to dip each bite in.
Baked potato w/sour cream and a big glass of 2007 KJ Pinot Noir.

That sounds awesome, I love Prime rib...watch a show last night Drive-ins, Dinners and Dives and the did a varation of the prime rib. It was a basic garden salad with prime rib sliced thin, placed on top with a handful of home made fries on top of that and a special house dressing on the side lol.dressing on top. May sound weird but it looked awesome and the customer feedback was pretty good.

Love Prime Rib roasts. Best one I've so far was a chimichurri marinade, flame seared on the grill, then smoked/slow cooked all day.

I really need to try that. There's a great butcher not far away.Man, you're lucky. You probably have them everywhere you look. Can't find many around here these days.

Ok, I'll add to this. Start off with a nice wedge of iceberg lettuce with a few rings of sweet onion, some cherry tomatoes, and a few slices of cucumber. Fresh cracked pepper on top, of course. For the dressing, my homemade Bleu Cheese dressing: two parts mayo, one part sour cream, splash of apple cider vinegar, and blue cheese crumples and cracked pepper to taste. Awesome!

I agree about the pan juices Rich. Do you poke your pinky finger when you sip the wine? :p
Was the wine used for sauteing the onions and mushrooms? :moon1:

Oh man I am definitely making a prime rib some time during the holidays. Maybe on Christmas.

I made my first prime rib yesterday. It turned out excellent. I started at 450 for 15 minutes and then cooked it for about an hour at 325. It was only a 4.5 pounder. The center was 118 degrees when I took it out of the oven. It was pretty darn rare in the center which is the way I like it. Very tender.
